Meet your barista, founder of Tropix and one of the co-founders of Mounelli coffee bar, Melanie D. Nunes.
Melanie is a coffee consultant with 15+ years of experience in Specialty Coffee and Belgian Barista Champion 2009. With her coffee company Tropix, she organises coffee farm tours, tastings and barista workshops for coffee lovers & professionals. At Mounelli she created our signature House Blend coffee and she can advise you on all coffee-related subjects (tools, recipes, origins,…)

TRIPLE COFFEE PAIRING: Taste coffee in 3 different ways!
A unique coffee-tasting experience, eat & drink coffee, while learning about Panama’s unique Specialty Coffee. During this hour and a half, coffee expert Melanie lets you relish coffee prepared by 3 different methods:

We start the afternoon with our Mounelli Houseblend, coffee locally sourced in Boquete, where we explain the different coffee varieties (Catuai, Pacamara & Geisha) and their flavour profile. Second, we try our Geisha Cold Brew, where we discuss flavour -& roasting profiles and this unique cold brewing method. To accompany this lovely Geisha coffee, we serve a classic Italian dessert, the tiramisu, prepared with our espresso blend.
During the tasting, participants will receive tips & tricks to brew coffee better at home and a handy leaflet with the coffee and dessert recipes.

Would you like to create stunning Latte Art in the Christmas theme and learn winter coffee recipes, then this workshop is for you! We learn how to steam milk to glossy, shiny microfoam and start making Latte Art designs like the Christmas tree, snowman, and stars design, using free pour and etching techniques.

When brewing filter coffee, we have to pay attention to multiple factors that influence our brew and have a big effect on the coffee flavour & taste. Each Slow Coffee method requires an adjustment of the grind size, water temperature, and extraction time.
You will receive a handy guide with brew recipes and techniques to pour. In group, you will each learn how to prepare your own pour-over filter coffee. Besides filter coffee, other slow coffee brewing methods will also be demonstrated (Aeropress & french press) giving you all the tips & tricks. After this workshop, you will understand how to adjust your brewing recipe to your favourite brewing method.

COFFEE CUPPING
The goal of this coffee-tasting experience is to learn about the many characteristics of coffee flavours and aromas. The significance of using fresh coffee beans, temperature, water type, and grind size will be discussed while cupping (= professionally tasting & evaluating coffee samples). We taste different coffee origins and discover the aromas, flavour, acidity and body in the coffee using a cupping sheet.

During the Coffee Cupping workshop, participants receive an introduction to Specialty Coffee where we discuss the importance of using freshly roasted coffee beans, temperature, water type and grind size. The different coffee varieties will be analysed on roast level, variety and process, and how this can affect the flavour of the coffee. Afterwards, we prepare the samples for cupping (tasting) and use a cupping sheet to note our findings. We provide you with exercises to discover and train your tasting palette with the SCA flavour wheel. Join us for the Coffee Cupping workshop to discover the complex world of coffee flavours & aromas.
